The other day I thought I'd try making the Banana & Blueberry Loaf from the Mums United website.It was really easy to make(& fix! after putting the batter into the tin & Piper pushing all the blueberries into the top I realised I forgot to add the brown sugar! So back in the bowl it went!) & tasted delicious. The Man of the House was a fan too. When I asked if he liked my healthy loaf he laughed at m & said, 'healthy? With all the sugar & crap in it?' That's when I said, 'Ah ha! The only crap in it is half a cup of bown sugar!' He was impressed!
Ingredients:
:: 2 cups self raising flour
:: 1 tsp bicarbonate of soda/baking powder
:: 1 tsp ground mixed spice(I used ground nutmeg because I didn't have any mixed spice)
::1/2 cup brown sugar
:: 1 cup reducdfat milk
:: 2 eggs
:: 2 large ripe banana, mashed
::I cup frozen or fresh blueberries
Method
:: Preheat oven to 170 degrees celcius(338 farenheit) for a fan forced oven. Grease & line a 13.5x24cm loaf pan with baking paper.
:: Sift flour, bicarb & spice int a large bowl. Stir in the brown sugar. In a seperate bowl combine milk, eggs & mashed banana. Gently stir yor wet ingredients into your dry ingredients.
::Spoon mixture into your loaf pan, scatter over the blueberries& gently push them into the batter with your fingertips(a job for kids with clean hands!). Smooth the surface(bah! I didn't bother with that bit).
:: Bake for for 50 minutes or until a scewer or knife inserted into the middle comes out clean(I had to bake mine for 60 minutes). Stand for 10 minutes in your pa before turning onto a wire rack. Serve warm, toasted or at room temperature.
We made this on Tuesday & it's still nice & fresh today after being store in a plastic container.
